Confused about choosing between 2 really good job offers.

I got 2 job offers. One from a company called Lamb Weston and another from Deloitte. Deloitte is paying me 10000$ less but it's more well known worldwide. Lamb Weston pays more and the company culture seems more friendlier and approachable overall. Many are advising me to ditch my lamb Weston offer which i accepted just 3 weeks back and join Deloitte. I'm confused. Both have good positions for hr. If anyone is knowledgeable in this aspect, please advise me. I also need suggestions on how to politely decline since i want to keep the doors open either ways.
