Declining an accepted offer in hopes of something better

Hi,

So I recently accepted a job offer that pays decently. I haven't officially started but will soon. However, I have also been interviewing with another company, and they finally invited me to do an on-location interview. This is a company I am extremely interested in working with. And I'm hesitant to decline the invitation as I may regret it later. This position will also unquestionably pay more with a better incentives package. Unfortunately, I can't just do the on site interview while I'm working at this other company, since they will have to fly me in and that will likely consume two business days. I am most concerned about not having a job at the end of this. I would appreciate any opinions from individuals that were/are in similar circumstances.
