Is a stressful job worth a 12k pay raise?

I was offered a job as a supply chain planner at a massive company for 55k/yr. They have already told me this position will be extremely stressful at times and that I need to make sure I am confident I can manage stress, and do the job well, since I will be the only supply planner for this division in North America. I've held a similar position before as an inventory controller and hated the atmosphere of the job.

They're hoping that I am going to stay with the company and take over as the demand planner in the next 5 years, so they're looking for a long-term commitment, despite the fact no one in the company I spoke with had been in the position for longer than 3 years.

They said there are no start and end times and that my day starts when I want and ends when I have finished my work. There is no overtime pay, which to me means 50+ hr work weeks.

There is also a provision in my contract that says they can fire me whenever they want and I am entitled to 2 weeks pay and nothing else, which is a massive shift from my current position which states they need to provide coaching and written warnings 3 times (I'm not unionized either). This spooks me since reviews online say the job security is bad at the company.

my current position as a AP admin/staff accountant pays 43k and despite not really liking the work, it is low stress and I'm pretty much free to do what I like with a fixed 40 hr work week.

So basically what I am asking is a 12k pay increase worth the increased stress and lower job security than my current position?
