Should I Quit??? Think I work for corporate cowboys

I have considered quitting my job since April 2020. And I am still unsure. My colleges are great and I work in great teams. I feel like I have evolved a lot and I still gain a lot of knowledge even today. I have worked in this company for two years now. I first worked there as an extra while I was studying. I got a contract a year ago when I finished my degree. I asked for the recommended minimal pay in my profession. They said they would not pay this since I was fresh out of uni and I accepted a lower offer. But my profession usually work a 9-5 job and this business works in shifts. So you work ridiculously hours for no extra pay and you work weekends. It should be included in your monthly payment from the business. In my contract I should work every 9th weekend, but when they gave me my schedule I worked every 7th weekend. They said they couldn’t make it every 9th weekend because they didn’t have enough employees. I though that’s okay, I know they are hiring more people now. But then they also needed me to work 1 weekend every month because of my “speciality” and I wanted more payment for that. We agreed that I don’t get more payment but I get extra holidays. So now I work weekends once a month and every 7th weekend and If I can’t finish all my workload during a week I come in extra on Saturdays. I don’t get paid more for this, I can just take extra holidays. So I have considered a lot to quit. But I really like my work environment and my colleges. I thought about this in January also because while I have worked there over 10 people have quit (we are usually 30-40 ish employees). Theses 3 months 3 have quit. In March/April the owner asked me to work illegally for an extra bonus. I (me an idiot) agreed because I knew they really needed help for their business. In June I was called in to a meeting by my boss who said they are not able to give me any bonus before August because of the economy. My boss also said they are not really willing to pay me since I worked illegally and she did not approve of this (The owner and my boss is not the same person). I agreed for them to pay me bit by bit, since they owe me hours I would work less hours but not lose any salary. So I don’t get anything for the extra work I put in. Now I consider to quit because I feel the workflow is unstable. Employees come in, work 1-2 years and quit. The people who are left here now to work are horrible. They yell, curse at me, are stressed and not authorised for this work. I thought everyone are underpaid but learned recently that’s not the case. A new employee (no authorization, no experience) from December 2019 is better paid than my colleges that are authorised and has worked here for 1 and 2 years.

When I signed the contract I was promised more payment after a year of work by the contract. And when I think now I want a lot more in salary then I get because of all the personal sacrifices I do. (Weekends, evenings, don’t really have that much spare time, can’t spend all the time I want with my SO) they even made me join a work chat so that I’m available 24/7. Before that I usually got messages, mails and calls 3-4 times a week after work hours. I even got an angry text message 4 at night one Thursday.

They always talk about change, and it has gotten better since I started there. But worse since the new employee joined and the last three quit.

So should I just quit or ride it out? The business is just 3,5 years old.

SORRY FOR THE RANT, PLEASE ADVICE ME. Is this normal in business?? My SO recommended me to quit after the the bonus thingy. Sorry for my BAD ENGLISH.
