I informally accepted a job through email, but haven't signed anything yet. But five minutes ago, I just got informally offered a better job, but haven't signed anything yet. How do I proceed?

Title kind of says it all. I got offered a job and said that I would take it through email. But I haven't signed a contract, so I don't believe I'm under any legal obligation, right?

But, the boss of a job I want more just gave me a call. He said he's pretty certain he'll give me the job, but won't know for sure for about a week.

So I don't want to officially turn down the first job, but how exactly could I delay signing the contract? Is it shitty of me to turn down the first job?
