Girlfriend thinking about quitting a bad job after 6 months. She's unsure of what to say to potential employers. She's also paranoid about her job history this past year.

My girlfriend and I had been in a long-distance relationship for four years and we finally moved in together a year and three months ago. Before she moved, she had been working at a local credit union full-time for five years doing everything from training new-hires to teller work to assisting with overseeing new branches getting set up. She moved here with a new job at another bank, which fired her after three months because the employer would rather blame employees when customers aren't happy when you implement policies like mandatory week-long holds on deposited paychecks to ensure the money goes through. She immediately got a temporary job at a cable company and found her current job days after that job ended.

At the current job, they're severely understaffed and it's incompetently run. The owners have their kids on the payroll getting full paychecks when they literally don't work there. She's supposed to be an administrative assistant and now they're planning on firing the collections department and pushing that job onto her, which she doesn't want to do at all, for no additional pay. They constantly complain about not having enough money and there being no jobs but the owners keep rejecting repair jobs because their repair techs are being scheduled to fix up the owner's house. The workload in general, they know a lot of the people in the office work at home and actively encourage it but when asked about a raise or getting paid for that time spent after hours, it's immediately "we don't have the money but we do definitely appreciate you".

She's been doing customer-oriented stuff for years and is completely tired of it to the point where it makes her miserable. She wants to do more back-office and administrative stuff like this job but every job in the area requires three years of experience. She was planning on staying here for three years and is hesitant to quit before her 1-year anniversary but she immediately grew warry of this place after a month and is miserable now. She and I agree that it's only a matter of time before they really start screwing her over despite how glowing and positive they are towards her since they're very petty towards everyone else in the office (including the owners towards each other).

She does not plan on quitting before finding another job but wants to find an employer that isn't a dumpster fire of unethical/incompetent behavior. What exactly does she need to say as her reasoning for leaving her current place of employment after six months?
