Leaving a job for a better position immediately after accepting offer?

I recently applied to a csr position at a retail store and as of right now it looks very likely that I'll get the job. They said callback will be in 2.5-3 weeks. However, I also applied to another position at a firm for a position that directly lines up with what I'm studying. Its also in an industry in which I have been involved in within student groups at university. This would be great for my professional career and is much more valuable experience in my eyes but the applications close in 2 weeks, right before callbacks from the other place.

My question is, if I accept the original offer from the store then get offered a position at the firm a little bit later, how do I go about telling them that I'm quitting after only a couple weeks.

I understand that on the one hand I'm giving my word and agreeing to work for one company but on the other hand, the experience at this firm could change my life.
