Working 20 hours part time to obtain Bachelors while working another part time job? (Long)

20 years old. I get my English Associates in Spring. I make 1070$ a month or 1200$ if I work 40 hours a week (absolutely nothing :(

My bills are 715$ including rent. I live with my boyfriend and he buys groceries. It's a luxury apartment (I can go cheaper but it would be about a 120$ difference for a cheaper yet clean, old apartment as he is paying 70% of all utilities and rent).

I stay at Starbucks because of the healthcare benefits (27/month out my paycheck) and because my bachelor's will be free in any choosing via Starbucks. I have to work a minimum of 20 hours in order to obtain my bachelor's. I could be a shift manager and make 1350$ a month average working 36 hours or I could be a server at a very lucrative location in town (my friends make about 2000 a month working 40). However, to do this, I would have to work 2 doubles and a single (this is the minimum amount they require) on top of working 20 hours and school. This equates to roughly 52 hours.

My last option is to try to work as an administrative assistant at a substitute teacher (I would prefer this most as a subs. librarian) hospital/firm/dental office for about 25~ hours a week so long as it pays at least 3 or 4 dollars more than my current job. I would do this to have experience.

I would really like advice. I don't even know what I'm going to choose my bachelors in this summer. I live in the Houston area if that's of any help! Thank you.
