When should I start to drop certain things from my resume?

I realize that on the surface this probably looks like it belongs in r/resume, although what I'm really trying to get at is a larger question of how you represent yourself on the job hunt, so i'm hoping mods will let this slide.

I am currently searching for jobs in finance, and other technical jobs in the GIS field. In college I worked as a server at a higher end restaurant and I still have that listed on my resume. I am trying really hard to keep my resume to 1 page but now I am running into the issue of feeling like I don't have enough space to elaborate on certain things. So the question is, do I drop the work experience that isn't that relevant from the jobs I am trying to get or do you keep it on to demonstrate variety and scope of experience? I am inclined to think that most employers wont really care about work experience that isnt directly relevant (if you dont otherwise tie it in via cover letter or something) but at the same time, I'm worried that I apply to a job and it happens to be that one employer that really wants to see the "down to earth" nature of someone who has worked service or other labor jobs.
