Seasonal jobs worth risking over a permanent contract

I've been working as a waiter/kitchen staff in a chain restaurant for the last 4 or so years, and ultimately I'm just sick of it.

I've begun the process of looking for a new position, and while I am ideally looking for a permanent position, is it worth applying to seasonal positions as well?

With the holidays coming up there's a couple of places that are hiring, and I see three outcomes if I were to get hired there.

  1. Best outcome

    I work there, I do well and they offer to extend the contract to a permanent role

  2. Second best outcome

I work there, I do well, but I keep applying for jobs. Hopefully I get a permanent position, either quitting partway or going straight onto the next job when my contract expires come January

  1. worst outcome (2 parts)

A)

same as number 2 I work there, I do well, keep applying to other jobs, but find no luck in the application process. Then spend however long unemployed until my next job

B) Same ending, but I go back to the job I'm planning on leaving and grovel.(which could either lead back to me either having a Job and my will to live shattered futher, or they say no and my ego is bruised,but I don't know what feels worse,being unemployed or doing something you hate)
