How do you even write a bad review about a company and stay anonymous?

I leave Google eviews all the time about restaurants, shops, etc

But when it's about a company or establishment that you worked at, I'm a bit puzzled. I'd like for them to not know its me writing a bad review. Maybe I'm over worrying because whats the worst that could happen if they know its me? A burned bridge? Let me know about any worse ramifications.

Also, how long do you wait after you've left them before leaving a bad review?
