Minimum time employed at a job??

TLDR: is there a minimum amount of time you should work at a job that you know isn't your forever career but would be a good stepping stone?

I currently work as a server and I recently graduated university. I've been having a very hard time finding new work, so I figure I need more experience. I have an unpaid internship right now as well. However, I just got a lead on a potential opening working in an optometry clinic at the front desk/assistant. It would pay more and be more stable than serving.

My concern is that this isn't a job I want forever. Is it bad to take a job you know you're not going to stay in? I want the job but I just feel bad/worry that if something changes in less than a year, I'm going to look bad. Should I plan on staying a certain minimum amount of time? I've read that it's bad to leave a job before 2 years are up. I just don't want to be in something more time than I have to if something else comes along within 2 years... Maybe I'm just being frivolous. Any advice/info is appreciated.
