How to approach another job interview?

I have a phone interview with a company, that hopefully will lead to a final zoom/(maybe) in person interview (not 100% sure yet)

But the job I have now currently is busy during the last few months of the year (alcohol industry) and doesn’t allow for vacation days

How would I approach doing an interview and having to take the day off? What if my current company says I can’t take a day off?
