My new job (much better title) was put on hold due to Covid - how can I include this in my job search materials?

I’m job searching and have a Covid-specific resume question.

I’ve worked in retail for many years while struggling to make the transition to a corporate role. Last February, I finally found a great Entry-Level position and was expected to start in March. Unfortunately, my offer was put on hold for the foreseeable future.

I’m aware that I never actually held this position, but is there a way to easily convey that I was hired into this role when applying for similar jobs? It's a better title with more responsibility, so I want to show that I'm qualified enough to have gotten a previous offer. My resume only lists my recent retail experience and relevant freelance work I’ve done. I’ve mentioned my experience to a recruiter I’m working with and in cover letters, but I’d love some thoughts. It’s a huge challenge to transition out of retail.
