Is a two weeks notice absolutely necessary, or a business formality?

I landed a new job which has a start date in next month. A two weeks notice would have to be delivered this month. Once, in the past, when I left and gave a two weeks notice, I was not allowed to work through the two weeks.

As I am employed at will, wouldn’t it make sense to not deliver a two weeks notice to ensure that I have worked a full 6 months as well as not be terminated due to resigning?

The current job hasn’t been terrible but it hasn’t been great. Burning bridges wouldn’t be the worst thing as I don’t need a good reference from them. That’s because my new job is a career changer with about twice my current salary, in a different function and field altogether. The background check has cleared and this is the final step with my current company.
