Where do you start? Job ads make me feel like I'm not qualified/skilled enough for anything.

So, I know that many people say, "job ads are just spewing out a laundry list for their dream employee" but seriously, whenever I look at job listings, I feel a sense of despair. I can't relate to most of what they're looking for. They're incredibly specific and want experience and qualifications I've never even heard of. Occasionally I'll find a job ad that I think I've got some matching skills for, but there will still be one or two requirements that just blow me away with their specificity. I've got almost 2 decades of work experience. I know I can do something, but job listings make me feel as if I know nothing.

So where, or how, do you start? After an hour or so of looking at job listings, I get so demoralized that I just give up looking (for now), come back later but just end up feeling the same. Is it actually worth applying to jobs where you only match around half of what they're looking for? Coz the other half of what they want just leaves me really clutching at straws.
