How would you SHOW someone in an interview situation how you project manage?

Say you've got an in-person interview with a company for a project manager role, and they're asking you to demonstrate your ability to manage a project and drive value. You can use tools and templates I've used in the past, whiteboard a real scenario, do a presentation, etc. - it's really up to you. How would you do it?

This is for a company that does not currently have any official project management processes in place - I'd say they're more Waterfall, but they've been sort of winging it - and are looking for someone to add expertise and beef up this side of the business.
