To start an interview process at the end of my search, or not?

I applied to Company S(tandby) a couple of months ago, and in our phone call, the recruiter said I was too inexperienced (true, am fresh grad) but she would be keeping me as a warm lead because my profile stands out otherwise.

In the ~3wks since my convo w Comp S, I've received an offer from Comp A and am in the second to last round for Comp B. A sister site at Comp S has reached out to me asking to begin an interview process. I would love to work at Comp S 200%, but in the past 3wks I resigned myself to the fact that Comp S was just gonna have to wait a couple of years.

Now this chance at an opportunity pops up, but it is ill timed. What should I do? Do I decline off the bat so as not to waste anyone's time, or should I go through with it at the chance of working at my top choice? What if I reject A and B (if B happens) and S doesn't work out? Seriously am at crossroads here. TIA!
