One year out of work with an engineering degree

I am close to hitting a year without work that's tied to my degree. I am a graduate with a bachelor's in Material Science and Engineer. I want to pursue a career as a Process engineer or Quality Assurance but I feel my chances as a desirable candidate have slimmed now that I'm past the year mark. I haven't had internship experience but have had 2 years of research experience in college. Am I right for thinking that landing a job will be harder now? What else can I do at this point?
