I just landed a new job today but I'm waiting on a decision from a second company that pays $10,000k more...

I'm supposed to start January 3 at the new job. What happens if I get an offer letter from company number two on January 3? What is the best way to go about accepting the newer position, & leaving the first without leaving a terrible taste in the first company's mouth?
