How to get better at interviews?

I didn't want to prepare too much cuz I didn't want my answers to be rehearsed to the point where I am thrown off by unexpected questions and I sound robotic and less real.

I do prepare for the general questions but not all questions you prepare for come up.

At the same time, my mind goes blank when I am asked questions and I feel like I am rambling on and on.

Interviews are hella stressful! Have had unsuccessful interviews so far :/
