How important is it to be employed already when looking for a high paying job?

I (24F) am currently working in the food service industry. Long story short, I strongly dislike my job and get called in last minute way too much. My favorite people recently left the job, and they were pretty much my last reason for staying.

I am finishing up my education and certifications this summer, for a job that pays 60k/year starting off. But with my 35 hr/week exhausting minimum wage paying job, I don't have the time or energy to study. I want to quit my job. But, will that make it harder to get my foot in the door with the competitive career I am shooting for? The industries are not very similar, and the pay gap is huge.

Will sticking out a few more months at my current job be worth it and help me land the career I want? Or should I quit and focus on my qualifications, and apply while jobless?
