How honest should you be in a job interview?

I’d like, one day, to open my own business in a specific field and I got suggested by more than one friend to try to get as much experience as possible by working in that specific field by getting employed by other companies, that one day could be possible competitors.

Should I be honest during and interview and say this? What are my future intentions with my career? Especially if they ask me where I see myself in 5/10 years? I know that it’s a weird and strange question, but I always valued being honest as a really important thing when starting a relationship, especially a professional one, and personally if I were recruiting I’d be glad to know that the employee I’m about to assume will quit in X months/years after he gets what he wants from the job. But, at the same time, it feels like a “career suicide” being THAT honest.
