Answering the "What is Your Desired Salary" Question in an Interview

So one thing that I've found really difficult to answer in interviews is the dreaded "what is your desired salary" question. You obviously don't want to go too low and undersell yourself, but also don't want to shoot too high where they don't even consider it.
