Why do some employers go above and beyond to explain job duties during the interview process?

So, I've been job searching for the past month trying to find a good fit while I'm in grad school. I just recently moved to a new city to be closer to school. I've had a few job interviews and thankfully just received a job offer last week. (I'm not applying for full time, long term positions yet due to being in school.)

One thing I've noticed with some of my past interviews is that the employer will go over every little detail with me like I've already been chosen. They'll talk about the possible work schedule, pay, give me a tour of the building even. I personally feel like this is very misleading. It also seems a little excessive to do for every single application that got to the interview process? Is this a dumb thing to be upset over? I'm sure there's a chance I'm overreacting. lol

I just don't want to leave the interview with my hopes up, thinking that I'm a good fit for the position. It's difficult not to though when they make me feel good about my resume and the Q&A session. This has happened two different times now where I assumed I was probably going to get the job and I didn't. I know there were probably later interviewees with more skills than me or a better work schedule, but it's still not the best feeling.
