Recieved job offer with a signing deadline but have interview for much more attractive position lined up.

Hey so I was wondering if I could get some advice on this current situation I'm in. After months of searching, I finally received a job offer from a fairly well respected company in my city. However, I also have an interview for a position that I would probably take over this one in a heartbeat. So in the offer they told me to have it signed by Monday, March 2. I'm just wondering if I accept the offer now but do well in this upcoming interview, how badly would it reflect on me to quit almost immediately? I should mention I don't actually start until the 16th. Is there a way to navigate this so that I don't just leave off giving a really nasty impression to this company?
