How can I convince my boss to get moving to hire my replacement?

TL;DR: I've been telling my boss for the last six months that he needs to find my replacement, and he hasn't done anything.

My boss and I have a very close relationship and in a way he's been a secondary father figure for me, and there is a high degree of trust and loyalty going both ways between us.

Five years ago we made a deal, in which he would pay for my Master's and in exchange I'd work for him the two years it took to finish the Master's and three more years. He did his part, and now I'm about to complete mine. In the meantime I've got a couple job offers that I have rejected due to this commitment, but it ends in June. From the first day of July on, I can consider myself free to apply for other jobs.

There are several reasons to look for another job:

  • I feel I already exhausted my chances to grow and learn here. I need to be somewhere else to be able to learn new things.
  • My boss is the kind of person who always asks for more and I can't say no to him, so my job has been the center of my life and that has stunted my growth as a person in all other aspects, including friends, hobbies, family and even my health.
  • I've always had the dream to move overseas and see the world from different places.
  • My job here is mostly secluded. I have very few professional contacts, which means I wouldn't have a strong network to get another job if this one fails.
  • The industry I work in is in a bad moment in my country and probably will be for the next several years.

Now, my work is highly specialized and the learning time is rather long. It took me at least a couple years to get a real understanding of what I'm doing, and I've developed a lot of tools and processes and only me and (kinda) my boss know how to do. I think someone who enters without the prior knowledge would take at least six months to properly learn the best part of it, making a point to teach them the full thing in a solid way. And I want to do it like that. I don't want the things I've worked on for the last five years to take a hit because I leave someone unprepared, and after five years of a great relationship I definitely don't want to leave this job on bad terms. I want to find the best replacement for me we can find, and train them the best way I can so they can continue my job, if possible better than me.

I told this to my boss in November, so he would have time enough to start looking for my replacement, and he hasn't done anything. I know I won't be out in the first day of July (I don't plan leaving until I have a firm offer, which probably will take several months), but if I ever find a job offer that I want, I'm not longer to be in control of the schedule. If I find a good offer to start in August, for example, I would have to teach my replacement the basics in a hurry. I've told this three times already.

Yet, he does nothing. I don't think if maybe he has taken me for granted for so long that he doesn't really believe that I will look for another job, or if he believes that ultimately I won't be able to leave if no one is to replace me, or if he wants to entice me to stay in some way.

So... how can I get my boss to wake up and hire my replacement?
