Do you continue interviewing after accepting an offer?

I've accepted an offer. It's been around 3 weeks but still no paperwork. They just say they'll update me when there's progress.

In the meantime, I've already had requests for interviews from applications from a few weeks ago.

What happens if I end up with multiple offers? Do I just accept them all and whichever gets the contract in front of me first gets me?
