Choosing the right time to accept an offer

Let's say, hypothetically, you applied to several jobs, one of them being your "dream job". If you receive an offer from another job first, but not from that dream job at the time, and the deadline to take the job is before the results of the dream job come out, should you take the risk and wait until the results of job you really want come out, rejecting the offer, or take the offer?
