Upcoming Interview. They want my current supervisor as a reference and not sure how to deal with their potential questions.

I'm job hunting because I don't make a lot of money in my current job and there are no opportunities for promotions or raises. I have an interview next week for a position where the salary is double what I make, has benefits, promotion and growth opportunities, etc. It's for a high school.
Anyway, they are asking me to bring my references with me to the interview and said that one of them should be my current employer. The problem is that my current boss doesn't know I want to leave. If I leave this place, I will basically ruin the flow of everything and cause her to do more work than she wants during the holidays. It's just me and her (so it's a two-person operation) and she doesn't want me to leave. She has even expressed to me that it would be horrible if I left and makes jokes about not wanting me to leave all the time. I like her and I don't want to leave, but at this salary and lack of growth opportunities, I need to. I don't want to risk my current employment and make it awkward between me and my boss if I don't get offered the position I'm interviewing for next week.... what do I do?
On top of this, the resume I sent to the place interviewing me next week is only 2 pages long (tried to keep it concise). I have additional experience that I didn't include in the resume because I didn't want to send them a 3 page resume and I tried to include jobs that were are relevant as possible. During the interview, should I bring up the other experiences that I didn't include in my resume? These experiences are more about my character and less about my technical skills (which the job description emphasized). Would it be viewed by them as a red flag if I talk about experience I didn't include? it's experience that's related to working with students, which is a small component of the position I'm interviewing for. The thing is, some of the experience I'm talking about won't be a surprise given that I had them while I was a student, so it's not like they will be surprised by it, but still not sure if I should talk about it...
