Prospective job mentioned they will be asking for references if my 2nd interview goes well. Who do I pick?

I am looking to leave my job and get one somewhere else. I had an interview today and it went very well. They mentioned that after my 2nd interview they will require 3 business references.

My last boss probably doesn't remember me, since it was 3 years ago. I don't even know if the guy works there anymore.

My current boss has no idea I'm looking at other jobs, and I would rather he didn't know.

Coworkers? I haven't known my coworkers too long because they have all been there less than a year.

I have no idea who to use as references, and I'm worried that will be a problem when it comes time to hand over the references.
