Resume Changes? Should I omit these?

Can I make changes to it? I want to take out a few previous employers and unpaid work.

I recently caught wind that she (my previous employer) denies I ever worked for her (I left because she constantly lied about things and I had to deal with these people she lied about to me with, since I handled most of her marketing work).

The part time work i did for her also coincided with my current job which ive had even before i worked for her, so i don't think it matters if i leave her out since there wont be any gaps.

I also want to leave out my unfinished education abroad.

Can I make these changes even though they probably already have a copy of my previous resume?
