job offer with regularly scheduled weeks! ?independant Contractor?

So I live in Toronto, Ontario and have been offered a pastry position at a fairly new company; however, they say there hired everyone as independent contractors. Can someone help me understand what this means. Does the government still take out taxes from my pay automatically as they do with normal jobs. I'm hella confused
