How To Create Writing Samples When You Don’t Have Any Recent Pieces

I’ve noticed a lot of writing jobs related to technical writing and proposal writing often require recent portfolio writing samples. There was a time during an interview process where I created a new sample from scratch for the requirement and they asked for more, and if didn’t have more it was a dealbreaker. I completely understand why, however do any of you have advice for a person who has been in the industry for almost 3 years but all of their relevant work samples are confidential and can’t be shared and they don’t have a fresh writing portfolio as a result? Note that I’ve been laid-off permanently due to COVID-19 and not for performance. The problem is I don’t have any fresh writing samples as I didn’t think of creating more samples the past 3 years because I was very busy with work and learning my past role. All my writing samples are from college and don’t reflect my writing skills now. Do you have any suggestions on topics/ideas to create ones from scratch? Has anyone faced this and was similar to me? I understand I should have been always updating my portfolio but I just didn’t realize it at the time. Any advice/experience helps, thank you!
