American and prospective EU citizen trying to decide on next career move. Looking for all opinions

Background: I'm in my late 20s, graduated from a top public university in the US with solid grades (3.6 GPA) in a STEM but obscure major (Cognitive Science/Machine Learning area of focus). The major would have been a great way to a great job, but unfortunately I got into it only in my last year of school (transferred from another university; long story). Thus, I was very weak as a programmer and never had the chance to do any internships. I worked in a lab and got published on an academic paper, if that matters.

Fast forward 5 years: I've only ever been able to get part time or contractor work, and now make around $15/hr, $20K in student loans and living with my parents in the most expensive state.

More info: I have always wanted to live in Europe - I just 'fit' better there, culturally. I LOVED France when I was younger, still do. My French is rusty but was once quite good. Went to Denmark last year - LOVED it, could easily live there. Through a family member (deceased), I am now possibly eligible for EU citizenship (Germany). Waiting on papers (not certain; probably will find out in 2 years).

Problem 1: Need direction and help. I've been struggling for years. Since graduation I've learned to program decently well (Python). Thought I might want to do medicine so have worked in an ER and at a health startup (current job). Idk what to do. I love talking with people, listening deeply, helping them; I love science and math (pharmacology, neuroscience, chemistry, astronomy); am very curious; a very critical thinker and enjoy coding. Ideal job would be a psychiatrist, but I fear the road is too long for me now (I'd have take a LOT of courses even before being accepted to med school). I think I could be happy as a software engineer (but I feel painfully under-qualified, compared to actual CS grads).

Problem 2: I don't know what kinds of jobs are abundant in Europe, or those that pay well. Does anyone know the equivalent of, say, Indeed.com for Denmark or Sweden? Very confused. What if I wanted to go to med school over there - is that a possibility? I know MDs make less money in Europe overall, but I doubt the $200K per year is worth the anguish many doctors in the US feel today (with crushing debt and a poor culture).
