Wanting to jump industries... is that even a possible thing and if it is, do you start at the very bottom all over again?

Hi ya'll.

In short, I'm an engineer for a big defense contractor and have been there for 6-7 years now, considered mid-level now. I'm really thinking of jumping to something completely different like Tech, Fintech, or medical industry.

Is it possible to jump and if it is, do I just end up at the very bottom as an entry level all over again? I know they mention stuff like "transferrable skills" but all I ever see on these requisitions is "have you worked in doing this before?" and "do you know these unique software because we just need ppl who can".
