How to start from the bottom (again) when nearly all jobs now have a lot of requirements/experience needed..

Long story short, used to do in-home care, health issues came up, had to quit, I’m better now but will always have chronic issues, so I don’t feel comfortable going back to the same job since it is physically demanding and I’m weaker now. I’m 30 and it’s hard to find something new, since I’ll I’m qualified for is what I used to do, no other things on my resume. Went a year with no luck, so I gave in and thought well I’ll just go back to what I used to do, but just do part time and see if I can manage that.. but I’ve applied to a handful of care companies and I’m not hearing back from them either.. because now there’s a college degree program for that type of work, which wasn’t really a thing when I started working.. so now I can’t even get back into what I already did. I don’t really have time or money for 2 or so years of school. It’s been years since I’ve worked.. so with a growing resume gap, getting older, and a weak resume.. I have no idea what the heck to do, or even where to start.
