Delay graduation by one semester(which will put me at disadvantage for Investment Banking/Consulting recruiting if things don't work out at the company) for a 6-month paid co-op that is just a harder version of my following summer internship?

Hi, I know that it is a super long title but please hear me out. I attend one of the Ivies(will be relevant for MBA application.) So I will be doing a summer internship for a Fortune 100 Consumer Goods company as a Consumer & Market analyst(basically internal consulting.) I recently found out they also have a 6-month co-op that will be for the same department but more on the data analytic side( the SI is similar but more on the psychology/soft skills side.) The co-op, when coupled with the SI, will definitely put me on a higher position and management track if I get and accept the return offer. My short-term goal is to get into MBB(MckinseyBainBCG) and my long-term goal is to get into an M7 business school(I am okay with not getting the former but I still would prefer to for the various exposures.) I do not care about the extra income from the co-op nor the fact that I will graduate one semester late. What I do care about is the coop will put me Off-Cycle for consulting, make me look like I am committed to Consumer Goods industry and thus will not be a good fit for a generalist position at MBB, is not too different from my summer internship(not much added value outside of the company's perspective), and affect my chance for an MBA since M7 mostly take IB/Consulting people.
