Can Going Back to Retail Lead to Better Employment Opportunities?

As an IT guy at mostly mom and pop shops or non-profits, the skills I have gained has not been too kind to me on the job searching front. I'm always missing at least half of the requirements for jobs I apply to on LinkedIn and I don't want to do help desk at another place. I also do not have the discipline to self study nor the desire to get the certifications which I've heard may or may not help me get jobs. So that leads me to think that Retail would be the perfect opportunity to sort of switch careers and work in different departments at a store to learn different/more measurable skills like sales/or business.

Maybe I'm not a good BSer and during interviews people don't believe me when I tell them all the stuff I've done, or maybe all the stuff I feel like I have done is not what the market currently needs. I came into my current job wide eyed and ready to change and enhance all their systems. Obviously, this didn't happen and as the years went by I began to hate working there. I have nothing in common with my mostly older co-workers. The mold in my office is affecting my skin in places I've never even looked before, my boss thinks everything is a conspiracy theory, I've never had a raise in my life, and I pretty much got demoted once they cut our team. People say, you have to leave that job ASAP! Yet, I've been searching for jobs I want to do at companies I'd love to work for for over 3 years and have gotten nowhere! In one month I had 20 interviews and they all rejected me at various stages. This was for system admin roles-solution support roles. About the next step up from my current position It seems I cannot get into these big name companies.

So that got me thinking. Since I've always had fun at my fast food jobs and the like, why not go that route? Knowing that I need to get into a place on the ground floor, I applied at Best Buy, my favorite retailer and I believe I'm having the salary discussion next week! It was just so easy and refreshing to hear them talking about roles I might be doing in such a short time! I figured I'll work part time there, while still at my full time job and wait until a full time role opens up. Basically my plan is to stay at Best Buy if I can't find anything better. Stay there. Move up the ranks. I can see me moving up pretty quickly based on my experience. I could see myself as Store Manager and possibly even higher. I feel like this is a great plan for however long that takes, but what after that? What have you done after retail? Or did you stay in retail and just move up the ladder? Wold love to hear some stories or if anyone had any similar experiences as me.
