Applying as an underqualified candidate

Hi all!

I recently got contacted by a recruiter to join a company as a data engineer, a position I thought I would never come across till I kept going down the data field (maybe another 15 years).

The recruiter told me that the company is looking for candidates who have experience in two skills and everything else on the resume are all taught/learned on the job.

I have the last round of interviews (2 interviews with three different people on the same day - interpersonal interview and technical interview) next week and in one area, I'm OK in the area while in the other area, I'm close to not proficient at all.

Other than preparing as much as I can, how can I prove to be great candidate for them? How can I prove that I'm always learning and always looking to improve my skills and learn new skills and technologies? How can I prove that although I might not have much experience in what they're looking for but I can learn and excel?

(Not exactly "how can I prove" but what do I say)

The company is absolutely great and the job is even greater.
