What's a good way to stand out from the rest of the candidates if you have less experience?

I just interviewed for an entry level environmental consulting job today, and I felt like it went well for the most part. From the job posting, it looks like their ideal candidate would have "up to 5 years of experience," and I have less than that, and very basic experience in a specialized skill that would be very important to have for this position.

After the interview was finished, one of the interviewers said I was the first person they interviewed for this position and that they have a "good number" of other candidates they'd like to interview in the next couple weeks, so I should expect hear back by then. My only card left to play, so to speak, is to send a thank you letter. Would it also be beneficial to persuasively summarize my strengths again or would it look desperate? What other ways can I leave a strong impression?

I really want this job and have been applying to similar positions since graduating college, and have been unemployed for 7 months after my last contracted job ended.
