What to do when you feel you're being used and abused

I've been with the same company for 6 years. A wall street based company with wall street like mentality. Work them until the drop. But it's getting worse. We're salaried employees without the benefit of overtime. We're now expected to work weekends and evenings, even be available on vacation. I haven't complained but now I'm at the end. A project came up at 9pm Friday and is due by end of business Tuesday. It's a two WEEK project! At least my part of it is. There's just no way to get it done. How do you politely push back? How do you tell your boss enough is enough with risking termination?
