Help with a cv and cover letter question please!

I used to be in a different industry (finance) but now I can't do that due to injury (nerve issues in hands due to a car accident)

I found a job that I can do since it's less hand reliant but they prefer someone with a biology background but I've been interested in this for many years. It clashed with finance so I never studied it at University.

Do I mention in the cover letter that even though I have an accounting background I am very interested in this? I've read up relevant biology on this in preparation and I like it.
