How to find the most requested positions in the environmental field?

Hello all, I am at a fork in my university career. I am currently doing a master in natural sciences, and am thinking of moving to a more specific study. I'm not completely sure of the next path, except that:

• I'd like to work in the environmental-green area
• I am more confident with plants than animals
• I don't want to do research or conservation, mostly consultancy
• Would like to stay in the mediterranean area

In my weighing the different paths a crucial piece of information is eluding me: what is a line of work that is very requested? How should I retrieve data about the different jobs opportunities, and how many possibilities are there in each field? Not knowing if there is work in an area is kind of a big deal...

If you could help me out to fill that blank, I'm sure I can make a better decision.
