Quitting theoretical chem/physics PhD research due to the insane workload required of researchers. Hoping to change to data science/analysis/etc. My main priority is workload/free time, not getting rich. How to move forward?

I'm used to living on my shitty 26k grad stipend. I am not a big spender. I would much, much, much rather be "comfortable and only working 35-40 hours" vs "affluent and working 50-55 hours regularly". I am NOT looking for a "do nothing" job. I had one of those and I was bored as shit. I'd rather actually work for my 8 hours and get something done, I am not interesting in sitting there and staring at a clock all day. However I really just want to have a predictable, regular, and reasonable schedule. Outside of government work and teaching, what are some things to look for in job postings/company culture/etc to make this happen? What are some red flags to look for and avoid about workload in interivews? What kind of questions would be good to ask and how can I word this in a way that won't make interviewers think I don't want to work at all?

Qualifications: BS Chemistry, BS Applied Math, will soon have Masters Chemistry, my research was very quantiative and was all theory (on the computer, not in the lab) so I am relatively proficient with mathematical programming (python, c++ mostly), my research PI quit shortly before I did (and believe me this is not a coincidence..) and is ghosting me and will almost certainly not be a reference although I worked occaisonally with a few other researchers who may help me in that regard. No real job history, just a few bullshit jobs + one chem lab internship
