Asking for more time to consider a job offer?

Hello!

I recently completed a interview for a position with a non-profit organization. The pay is bit lower than what I would like (~4K) but it is for a full time, unionized role. I was given the job offer this Wednesday and was requested to return the offer signed by Monday morning.

The same day, I was contacted by a Recruiter for another position more similar to my recent work experience (before being laid off due to COVID). I had an opportunity to speak with the Recruiter today to answer questions regarding my qualifications and was requested to send in my resume for review, The pay for this job is much higher and offers good opportunities it seems. The Recruiter advised that I would hear back early next week; but there has not been an official offer at this time.

Would there be a way for me to request for more time to consider the job offer that was received from the non-profit organization? I don't want to say "no" but then have the other opportunity pass by without back. I would be hoping to push back the deadline by at least 2 days so I can hear back from the second opportunity. Is there a tactful way without saying that I am trying to consider all of my options?

I don't want to shoot myself in the foot, especially given these uncertain times right now .
