Question about recent sign in interviews I've been seeing

So I've been doing some experiments with regards to my interviewing technique (playing around with my presentation, etc) and have been recording some data.

I tend to be good at reading body language/signs but recently have had something I'm trying to understand.

I had two interviews recently where I've asked questions, and then the other person would answer the question in excruciatingly full detail. They would just continue to talk, talk, talk and keep answering the question and extending their answer. They speak in a fairly neutral tone. But they would KEEP talking and continuously building on answering the question, even if it were a simple question. For example, "Tell me what you do to manage expectations of a new employee, who is just joining the company, but is supposed to be an expert". Answer: "[hilariously long and detailed answer that has every sentence building on the previous statements and extending itself for 5 minutes straight]".

I was curious if any other people had any ideas or experiences with this and what it may mean, psychologically speaking.
