How to explain why I am looking so soon

TL/DR: I have only been at my job for 8 months, but I have no job security - how do I explain this to future employers in interviews?

Long story:

I joined a company in April, after my previous job went through a reorganization and I lost one boss after the other in a 5 month period. I was an executive assistant with no executives left.

The job I took was not an EA role, but a title that fit more with what I want to do long term. I have excellent luck, and I caught the flu just after I started and I was hospitalized. I came back and there was a special project that they put me on, totally unrelated to what I was hired for, and very tedious. I was told it would be short term, and then I could start to train for the job I was hired for soon. 8 months later, I am still doing this project because I took leadership of it and I now manage it along with contractors brought in to help. That is just how I am - I get things done.

My company is going through a hiring freeze and a house cleaning, and I am not confident that I have any job security. My contractors will be done in 3 weeks.

I am now looking to move (though I wanted to stay and learn the role I was hired for - probably not happening). I don't know how to explain this if I get interviews and it comes up. I have had really bad job luck this past year, related to reorganization at my last job, and feeling bait and switched at my current job.
