Should I sign an acknowledgement that I received and read an employee handbook, even though I haven't been given one?

I just started a job as a line cook working for someone who is really laid back and informal (for example, I started working earlier this week and he's only just now getting around to giving me the onboarding paperwork). I love the low-pressure, friendly environment, and I'm 90% sure that he either forgot to give me a copy of the handbook, or just doesn't bother with it because there's nothing in there that I don't already know. An anonymized version of the form can be seen here. Are there any shenanigans he could be trying to pull, or is it probably ok to just go ahead and sign the handbook receipt form?
