Should I sign an acknowledgement that I received and read an employee handbook, even though I haven't been given one?

I just started a job as a line cook working for someone who is really laid back and informal (for example, I started working earlier this week and he's only just now getting around to giving me the onboarding paperwork). I love the low-pressure, friendly environment, and I'm 90% sure that he either forgot to give me a copy of the handbook, or just doesn't bother with it because there's nothing in there that I don't already know.
