Interview for better role after signing offer letter for another role?

I recently accepted a position, but have not started yet. I'm also interviewing at another company for a role that pays higher and is better aligned with my goals (after a phone screen). I did not have the job offer when the phone screen was scheduled. If my interviewers ask if I have any other interviews or job offers, what would be most appropriate to say?
